Recipe for Chicken Grazzy

Serves / Makes a lot

Ingredients

1 whole chicken or 1 pound thighs

1 pound onions, chopped

50 grams pepper

1 large green pepper, chopped

hot pepper

2 beef bullion cubes

salt

1 clove garlic

vinegar

yellow mustard

oil

olives

 

 

Procedure

1.      Wash chicken with water and vinegar.

2.      Place chicken in bowl with onions, garlic, season with pepper, bullion cubes, hot pepper, salt and mustard.  Let stand for 30 minutes.

3.      Remove chicken from bowl.  Fry or bake chicken.

4.      Sauté onions.

5.      Add 1cup water.

6.      Serve with rice.

 

Recipe for Appetizer

Ingredients

2 bundles parsley

2 large tomatoes

1 medium white onion

½ cup fine bulgur wheat

1 cup olives

juice from 2 large lemons

 

Procedure

  1. Soak the wheat in cold water for 30 minutes.
  2. Chop onion, tomato, and parsley.
  3. Mix lemon juice and salt. 
  4. Mix all ingredients together.

 

Recipe for Columbian Special Salad

Ingredients

 

2 pounds shrimp, peeled and deveined

1 cup carrots, peeled and diced

1 cup green beans, diced

1 cup peas

½ cup onions, chopped

½ cup red pepper, chopped

½ cup celery, chopped

2 large potatoes, peeled and chopped

1 lemon

½ teaspoon salt

¼ teaspoon pepper

¼ teaspoon garlic powder

2 hard-boiled eggs, chopped

½ cup mayonnaise

½ cup cream

2 tablespoons cilantro

1 tablespoon fresh parsley

 

 

Procedure

1.      Cook shrimp with lemon and salt.  Drain and cool.

2.      Cook carrots, green beans, peas with salt.  Cook until tender.  Drain and cool.

3.      Cook potatoes until tender.  Drain and cool.

4.      Mix all ingredients except cilantro and parsley.

5.      Refrigerate mixture for 20 minutes.

6.      Mix in cilantro and parsley before serving.

 

Recipe for Curry and Rice

Serves / Makes 5 servings

Ingredients

1 onion, chopped

1 carrot, chopped

1 potato, chopped

1 clove garlic, minced

12 oz. meat

1 tablespoon oil

3 cups water

3.5 ounces curry sauce mix

 

optional: 1 tablespoon ketchup, 1 tablespoon soy sauce, or 1 tablespoon vanilla ice cream

 

Procedure

1.      In a frying pan, heat oil; add garlic and meat.  Saute.

2.      Add vegetables and cook until onions are translucent.

3.      Add water and bring to a boil.

4.      Reduce heat; cover and cook over low heat until vegetables are done.

5.      Skim off residue.  Add curry sauce mix and stir until melted.

6.      Simmer 5 minutes, stirring constantly.

7.      Add one of the optional items if the dish is too spicy.

8.      Serve over white rice.

 

 

Recipe for Peruvian Lomo Saltado

Serves / Makes 4 servings

Ingredients

6 tablespoons vegetable oil

½ cup onions, sliced

2 cloves garlic, minced

½ cup green, yellow or red pepper, chopped

1 ½ cups potatoes, sliced

1 tablespoon jalapeno pepper, diced

½ pound sirloin steak, thinly sliced

1 tomato, chopped

1 teaspoon fresh oregano

salt and pepper to taste

 

Procedure

1.      Heat 4 tablespoons of oil in non-stick pan.  Fry potatoes; remove from pan.

2.      Heat remaining oil and cook sirloin for 6 minutes.

3.      Add onions, garlic, peppers, and potatoes.  Cook for 5 minutes.

4.      Add remaining ingredients.

5.      Serve with white rice.

 

Recipe for Sushi

Serves / Makes 2 rolls

Ingredients

2 sheets roasted seaweed

2 cups cooked rice

1 diced avocado

1 sheet torn smoked salmon

soy sauce for dipping

 

 

Procedure

1.      Place seaweed sheet on plastic wrap or bamboo mat.

2.      Evenly spread 1 cup of rice on seaweed stopping ¼ inch from edge.

3.      Place avocado and salmon in the center.

4.      Tightly fold the roll over and roll.

5.      Cut the roll in half.
